Fireworks is targeted towards web graphics. It's good for making all the little buttons and symbols a web page may need.

Illustrator is focused on vector graphics. Vector graphics can scale up or down without loss of resolution. It is good to use when you need large sized graphics like giant posters, car decals and signs. It has other benefits as well. But the biggest is that it works well from business card size to billboard size.
