It may depend on what application you are importing FROM. From Photoshop, for example, you can create a ';clipping path'; and import, or ';Place'; it into Illustrator.





However, once in Illustrator, you can make a mask that covers up the background area you don't want displayed.





You need to learn how to use the vector based pen tool. Then you simply ';trace'; around the image you want to keep to make a ';path'; around it. (no fill, no stroke) then, select the path and the image (Ctrl+click, or Cmd+click on a Mac). In the Object menu, make a mask.





Group the path and picture.





Now, you can place other images behind and in front of the masked image, without that white background, or add other backgrounds. You can arrange the grouped object and move it in front or behind other objects such as text and other images.
